The O.P refers to grapes that were grown on Oxfordian limestone soils and Portlandian soils. Pale yellow robe with green tints. The nose is discreet. After stirring, the second nose develops aromas of rose and lily complemented with notes of quince and ripen mandarins. On the palate the attack is sharp and lively. This freshness matches with the aromas of lemon, lime, rose and white flowers. The finish is full of tension with a nice length.
Neutral yeast in order to preserve the fruity aromas of the grapes, keeping the fresh typicity of that terroir. Fermentation at 16°C to get the range of flavours and aromas characteristic of this type of terroir while preserving freshness and fruit. Aged 5 months on lees and stirred once to better express the typicity of the terroir. No malolactic fermentation.
